I love black-eyed peas! I'd much rather have fresh peas than dried, but I'll take them anyway I can get them. I don't remember where I found this recipe, but I really like it. The original recipe used salt pork, but I use bacon. Give me a bowl of these peas, a dash of Tabasco, a slab of hot-from-the-oven cornbread, some green onions and tomato slices then stand out of the way!

Black-Eyed Peas

This dish harks back to West Africa, where black-eyed peas, according to some culinary historians, were eaten prior to European arrival. Certainly for many African-Americans, black-eyed peas were, and are still, the staff of life. They turn up with rice in Hoppin' John, the traditional New Year's dish that has spread from South Carolina to the rest of the South; and they are often served at other times of the year as a main dish or vegetable. This is a basic recipe. The black-eyed peas may also be cooked with a ham bone, a precooked ham hock, or with olive oil instead of bacon fat. This last sacrifices the traditional smoky taste to contemporary concerns about cholesterol, but whatever way black-eyed peas are served, they're delicious. Black-eyed peas can even be pickled, as in this recipe, which also goes by the name of Texas caviar. The dish can be prepared with either cooked dried black-eyed peas, canned ones, or, if you are really lucky and live in an area where they can be obtained, with fresh ones. May be prepared in 45 minutes or less.

A Southern Classic! In most Southern homes, black-eyed peas are always served on New Year's Day for good luck. I usually cook these early on New Year's Eve day. That way, if we have guests over for a party that night, I can use part of this basic recipe to make "Texas Caviar" which is a fantastic salsa/dip to eat with tortilla chips. (that recipe follows)

This recipe was the result of me sifting through the leftovers I had and wanting some pasta salad. I love black-eyed peas, but whenever I make them we always have leftovers because I get tired of eating them plain. This is a great way to use up those leftovers, and a few other random ingredients you may have lying around. Though this dish is Syrian variations are common through out the Mediterranean. For a quick dish, you can substitute the dried peas and soaking with 3 1/2 cups of canned of black-eyed peas. If you go that route, try rinsing the beans and using a cup of vegetable broth in lieu of the cooking liquid. Don?t let the cooking time scare you off, it?s soaking and simmer time that leaves you free to tend to other things. Consider greens and rice as an accompaniment to this dish.
