Gluten Free Orange Chocolate Chip Muffins Recipe

This is a recipe from pre-GF days that I recently converted. It tastes just as good as it did before. My in-laws visited and couldn't tell the difference. These are great for brunch. I make up several bags of the dry ingredients ahead of time to reduce prep time and reduce my likelihood of leaving out ingredients (I'm so not a morning person). For a change of pace, substitute dried cranberries and some chopped pecans for the chocolate chips. As with ALL gluten free cooking, ensure that the ingredients you use are gluten free.

I found this recipe at lesleycooks.tripod.com where she has a gluten free category. I had posted a request for tortilla recipes on Zaar because I needed something like a wrap I could make up for my girl's school lunches. After trying a couple I was kindly given, I found this one had a great taste and texture my kids loved. While it may not strictly be a tortilla it meets the purpose. They freeze well if you separate them with greaseproof paper or baking paper. Do not be put off by the runny mixture, and do leave it to stand for 30 minutes before cooking. I doubled the mixture so I only had to make them once a fortnight - it made up 7 large ones, but the number will depend on the pan you use.

I wanted to use up some left over ingredients from a day of cooking and I also had received an abundance of Squash in my farm box that week. Garam Masala is an aromatic and hot spice mixture that is essential to numerous types of dishes in Indian, Nepalese and Pakistani cooking. The words mean "hot spices" and as well as adding the "heat" to Indian cooking, the spice mix should be subtle and aromatic. It is usually added towards the end of the cooking time, or even as a final garnish, unlike commercial curry powders that need to "cook" off the cornflour and other anti-clogging ingredients. This is my favourite Garam Masala mixture; there is no "standardized" recipe for this spice mixture, but I suspect that every Indian, Nepalese and Pakistani home will have their own "secret" mix! Grind the spices in smallish quantities to preserve the flavour and quality of the mixture, and then store in an airtight container, away from direct sunlight and heat. NB: Black cumin seeds are also called Royal Cumin or Shah Zeera. This spice mix makes a great gift - especially if you tie a recipe card around the neck of the jar with a whole piece of cinnamon!
