Four Cheese Macaroni

Four Cheese Macaroni

This is a wonderful way to use up all those bits of cheese left over in the fridge. The idea comes from Weight Watchers and it lends itself to using cheese you have on hand. Of course, Weight Watchers recommends reduced-fat cheese and there were quite a few changes made by me. To ensure that the sauce is nice and creamy, make sure that one of the cheeses you use is a processed cheese. True comfort food!

Zucchini Cheese Soup (A.k.a. Vache Qui Rit Soup)

Zucchini Cheese Soup (A.k.a. Vache Qui Rit Soup)

This is a children's favourite in France and has quickly become my children's favourite, here in Canada. I saw Laura Calder's "French Food at Home" show on Food Network Canada (foodtv.ca) where she prepared this quick and delicious recipe. You can substitute or add any vegetable you wish. I have found it is great made with broccoli or cauliflower and I sometimes add a couple of julienned carrots just to switch it up a bit. A fairly healthy soup because it is not loaded with cream, flour, butter or highly processed cheeses.

Silly- Simple Cheese and Garlic Filled Crescents

Silly- Simple Cheese and Garlic Filled Crescents

These are so simple it's silly, but my husband loves them so much I thought I'd post this. I like them, too! I've tried making these a few different ways, but I believe good old processed American cheese singles works the best for this - it's clean and easy to measure and roll up, and it melts perfectly during the allotted baking time. You can skip the cooking spray and foil if you want and just bake these directly on the baking sheet, but I like to do it this way because it makes clean up easier, and any leftovers can be stored and reheated right in the foil.

Cheese and Onion Stuffed Sausages

Cheese and Onion Stuffed Sausages

Nice quick way to spriten up some plain beef sausages. I'd personally always go with natural cheese rather than processed for something like this but other pizza style cheeses like mozzarella would be good for a variation.

Crumpets With Cheese & Bacon

Crumpets With Cheese & Bacon

Nice way to enjoy English crumpets. If you're from a country where they're not widely available do yourself a favour and make some from scratch, there are plenty of recipes on RecipeZaar for them. This recipe really works a lot better using natural cheese rather than processed cheese.

Cheese Quesadillas

This is my own creation...I think the only thing I've posted so far that is completely my own. These are usually huge enough to serve 2 people. I use La Mas Rica brand tortillas, I got them either at Walmart or Aldi, can't remember. I use Kraft or Food Club cheese slices. I don't use Velveeta myself, I usually buy whatever is cheap...any processed cheese slices will do.
