My favourite idea from Bette Hagman's books (and I got lots) was Rice a Roni. It was one of the things I missed the most when we went gluten free. This recipe, with her suggestion, is identical to the one I made with gluten. It's a great week night dinner, as it's fast, healthy and in one pot.

Very tasty, gluten free meatloaf using rice as the binder. Not sure where the recipe originated. If I am pressed for time, I will bake these in muffins tins instead of the loaf pan. Also, my family prefers the celery, onion and bell pepper be sauteed in a little broth or oil prior to adding to the meat.
For anyone who misses the fun of Springfield, Mo Style Cashew Chicken. If you're gluten-free like me, use the following method to fry: Mix 1 part Rice flour, 1 part Tapioca starch, 1 part Cornstarch with whatever spices you like. Split this mixture in to two bowls. In a third bowl, beat 2 eggs and add between 1/4 and a 1/2 cup of milk, until it just forms an emulsion. Set up the bowls like so: Flour, Eggs, Flour. Now, take your cut up chicken bits, drop in the first flour bowl and coat lightly, but completely. Move to egg mixture, I let it soak for about 10 seconds. Last, drop in the last flour bowl and cover well. Drop in a hot pan with 1/4 inch or so of oil and cook for 3 minutes on each side, or until brown.
A light and tasty pasta salad treat great for any occasion. It's so good you can substitute wheat pasta for your non GF friends (but why, they'll never know if you don't tell them!)Note: For best results use Tinkyada brown rice spirals. This rice pasta is very easy to prepare and tolerant of overcooking without becoming mushy.

A tasty side for simple grilled chicken or meat. Being gluten-free I tend to eat a lot of rice and this makes for a great change. I love the peppery flavour of coriander. Use a gluten-free stock tomake this recipe suitbale to a gluten-free diet (I like to use Massell brand )

Yay! General Mills reformulated their Rice and Corn Chex to be gluten-free! Watch for gluten-free on the labels. This recipe makes a GREAT snack for kids especially since the cereal is fortified with iron and folic acid. The peanut butter is also good for protein, but watch out for PB allergies. For the recipe to be casein free, you have to check the ingredients in the chocolate chips.
This is basically normal alfredo sauce but lots of the alfredo sauce that is canned in stores has modified food starch in it which is no good for a gluten free diet. So this is what my aunt came up with and is so delicious. Its good to add to rice noodles and chicken or put on gluten free pizza crust or in rice noodle alfredo lasagna. This really works with anything and is a good Gluten Free base. Buckwheat noodles are the best with this but I have only found them on sale once. Rice noodles are very cheap at the local Chinese market in all shapes and sizes. I also use this in rice alfredo casserol. If you come up with any more ideas let me know.
