Arctic Char with Horseradish Cream, Sweet-and-Sour Beets, and Dandelion Greens

Salmon fillets can be substituted for the char. For a shortcut version of the horseradish cream, just mix 3/4 cup heavy whipping cream with prepared white horseradish to taste.

Best Garlic Dip

Best Garlic Dip

I have adapted this from a recipe I found on the German cooking website chefkoch.de and changed it to my liking. I first made this for a New Year's Eve party and eventhough it makes quite a large amount, there was none left at the end. If you can't find Quark, you can substitute with either low-fat sour cream or natural yoghurt or a mix of the two. Have a look in you frozen food department of the grocery store for the frozen herbs, they come in small flat cartons in the UK and Germany. The paprika mentioned is the sweet mild kind, not very hot.

Chuhai Cocktail - Japanese Sweet and Sour Shochu Cocktail

When it came to mixed drinks, I was mostly a gin and tonic person for the most of my youth. Then I discovered Tom Collins and Mojito. Now, I love Chu Hai the best because of the taste and ease in making. In Japan these Chu Hai can be purchased in cans and though not very good, they are hugely popular there among younger generation. Most younger people in Japan prefer wine or chuhai and not sake. My good friend in Japan has several places she likes to go for drinks and eats and usually purchase a whole bottle of shochu or soju and have the eating establishment keep the bottle for her. Then when she goes there, she asks for her own bottle and buys club soda and sweet and sour mix and mix her own. This one is very basic Chu Hai. Shochu (Japanese spelling), Awamori (Okinawan) or Soju (Korean spelling) is distilled alcoholic beverage very popular in Japan, Okinawa, and Korea. It is not sake (rice wine) and recommend sake not be used here because it tastes totally different like whiskey and vodka.
