[gluten-Free!!!] Springfield Style Cashew Chicken

[gluten-Free!!!] Springfield Style Cashew Chicken

For anyone who misses the fun of Springfield, Mo Style Cashew Chicken. If you're gluten-free like me, use the following method to fry: Mix 1 part Rice flour, 1 part Tapioca starch, 1 part Cornstarch with whatever spices you like. Split this mixture in to two bowls. In a third bowl, beat 2 eggs and add between 1/4 and a 1/2 cup of milk, until it just forms an emulsion. Set up the bowls like so: Flour, Eggs, Flour. Now, take your cut up chicken bits, drop in the first flour bowl and coat lightly, but completely. Move to egg mixture, I let it soak for about 10 seconds. Last, drop in the last flour bowl and cover well. Drop in a hot pan with 1/4 inch or so of oil and cook for 3 minutes on each side, or until brown. - Similiar recipes
Tapioca Pudding (using Minute Tapioca)

Tapioca Pudding (using Minute Tapioca)

This is comfort food at its finest. I love it hot, I love it warm, but I absolutely adore it ice-cold from the refrigerator. Personally, I think it belongs in it's own food group. But perhaps I'm biased. :D Hmmm, I think I might need to go make some tapioca pudding after posting this recipe... DH loves it when I make this, and I like that I don't have to fuss with soaking the tapioca overnight. I never remember to do that... (P.S. Decisions, decisions...they want to know how many servings? I suppose I should say something other than one, huh? LOL) - Similiar recipes

Decadent Tapioca Pudding

Decadent Tapioca Pudding

A quick and easy microwave dish that tastes like you spent hours whipping it up. This is my stepped up version with more flavor than the bland recipe on the box. Tapioca is my favorite comfort food, but hubby and I have an ongoing disagreement about whether it should be served chilled - I like it slightly warm, hubby likes it chilled. Unfortunately, it sometimes disappears before it's chilled enough for his liking...shh, don't tell him! - Similiar recipes
