Adapted from "Good Eats". We thought we would give it a try. My husband was told to try to reduce his wheat & gluten. They are SO GOOD! You wouldn't even know they were gluten free! This was my first gluten free recipe to try & I'm not nervous anymore!

I got this today from a weekely email newsletter from GlutenFreeda, a great place to get gluten free recipes and this sounds to great, and also should be fairly quick and easy to make. The brand of Crisp rice cereal that they listed was EnviroKids Koala Crisps, which can usually be found in the healthy (Organic) food isle of any grocery store. You can probably use any brand of Crisp Rice cereal. I think that most brands are made of just rice, but check to label if you are wheat intolerant to make sure. Enjoy!!

Everyone loves the classic Five Layer Cookie Bars or Magic Cookie Bars. I had to come up with a wheat-free cookie and did, using Almond Flour (finely ground almonds)! When served, no one even noticed that the bottom crust was made out of almonds and the cookies were a hit! These too are great for bake sales! **I have to give credit for the original recipe to The Eagle Brand Company as I found their recipe years ago in a magazine somewhere and I have been making this cookie bar for years!

Gluten-Free Gingerbread Cookies

Absolutely delicious! Adapted from recipe at simplycoconut.com, this will make any celiac or gluten-intolerant person VERY happy. "Normal" folks will love it, too. Great flavor and texture. Only drawback is that the "dough" is very loose and the cookies spread out into slightly irregular shapes on the sheet. If you have a madeline pan, consider using it for these — it would make a very pretty "cake". Using coconut flour instead of wheat flour makes this a good choice for a diabetic, since one cookie has only 4 net carbs.
